Chef Chad Willis wins Oklahoma Taste of Elegance with Asian-Inspired Pork Belly

BY DAVE CATHEY, Food EditorChef Chad Willis recently won his third Taste of Elegance competition, proving the most important ingredient he had was experience. Willis won his first competition in 2008, when he was executive chef of The Metro Wine Bar and Bistro, staving off the efforts of Ian Wagner, then of Deep Fork Group, and a young chef named Joshua Valentine, who was on the verge of graduating from The Coach House Apprenticeship Program. Since then, Valentine opened and closed a restaurant called The Divine Swine, finished third on the 10th season of Bravo’s “Top Chef” (where he earned a reputation for his love of bacon) and took a job as executive chef of The George Prime Steakhouse, where he hired Willis, a fellow Coach House alum and now three-time winner of the Taste of Elegance. Since that first win in ’08, Willis won again in 2010, left The Metro to work a couple of years for Saturn Grill, and then took his current job at The George, 5900 Mosteller Drive, where he conceived and tested his Asian-Inspired Pork Belly with Jade Sauce, Cabbage and Peanuts. The third win was no surprise to Valentine, who said he knew Willis had a strong dish before he left for the competition at Remington Park. “That Jade Sauce is the bomb,” Valentine said.Read more on NewsOK.com
