When I worked for a brief time in the thriving field of packaged meals, a phrase my bosses liked to toss around was “shelf stable.” They were referring to a product that would last at room temperature or in a fridge or freezer without going bad. When it comes to salsas, most of the store-bought ones achieve shelf stability by adding citric or ascorbic acid, additives that make the product last longer, but leave an unpleasant aftertaste. If you make your own salsas, you can achieve a certain amount of shelf stability by cooking your ingredients.
