Infinite Monkey Theorem will release its first batch of The Bubble Universe on Dec. 2 at its RiNo winery and taproom with Marczyk Fine Foods. The local winery is known for its reds, whites and rosés, but for Ben Parsons — winemaker and founder of Infinite Monkey Theorem — bringing bubbly into the lineup was about more than making a new product. “I promised my wife when we first started dating that I would make her a méthode champenoise sparkling wine one day,” Parsons said.
