Liberati, an Italian who landed in Colorado via Rome, opened the brewery on Champa Street in the fall of 2018 and managed to introduce something novel to Denver’s crowded craft beer market: oenobeer, a beer/wine hybrid made through ”co-fermentation of wort and must, a new process, a fusion of the processes of winemaking and brewing,” according to Liberati’s website. A menu of Italian fare sweetened the deal for Denver drinkers in search of something they likely hadn’t tasted before. But now, less than two years after opening, Liberati Restaurant and Brewery will close on Monday.
