When I heard that New Saigon changed owners, I was afraid. I was very afraid. After all, this is one of the best Vietnamese restaurants in town and home to DIY spring rolls before DIY was even an acronym-gleam in anyone’s eye. So I did what any other normal, red-blooded New Saigon fan would do — I called the restaurant over and over until the new owner reassured me that no, the recipes won’t be changing and yes, I can still get the make your own spring rolls. Brother-sister team Bao and Mai Vu bought the restaurant from long-time owners Thai Nguyen and Ha Pham at the beginning of April.
