What's So Groat About Buckwheat

Buckwheat is officially a fruit, not a grain. But it’s milled for flour, which in the U.S. is most commonly used for pancakes. In Russia and China, where buckwheat is far more popular, the seed is the basis of noodles, beer, ice cream and porridge.
