Ellis, who was hoping to buy the store's famous boudin before it ran out for the day, approached the counter and asked for 10 pounds. Hours after the announcement, patrons arrived in droves, buying up large quantities of meats and other local eats. Nick's expanded to include a meat market in 1971, when the Nicotres hired a butcher who taught the family his secret boudin recipe.
