There’s a new southern restaurant opening in Denver, y’all. LOW Country Kitchen will debut in LoHi on Monday, Feb. 27. If you frequent Steamboat Springs, you might already know them – the first LOW opened there in spring 2014. The comfort food and warm hospitality were a hit, so owners Katy and Brian Vaughn decided to bring the country down to us city folk. “As native Southerners, we have been so pleased with the warmth of our staff and the generosity shown to us by our neighbors in LoHi,” Katy said.
