Professor Damien Thompson just might have one of the more unusual college jobs around. The Regis University anthropology professor not only teaches his students in the classroom — he also works and instructs in a 1.5-acre garden in the Aria development across from campus. He launched a community systems minor degree around the garden. “It’s a cool concept,” Thompson said.
