ELDORADO SPRINGS — In my family, summer is all about water and our frequent immersion in it. As of early July we had snorkeled in saltwater, cooled off in freshwater lakes and been at the pool for swim practice every morning. So it was with the palates of connoisseurs that my daughters and I pulled off the highway just south of Boulder to visit Eldorado Springs — or so I thought. “Mom, what’s artesian water,” my youngest daughter asked as we passed by the Springs Pool in search of a parking spot. “Well, it’s, uh … special water, fancy water, like something that’s handmade instead of store bought,” I answered. Long pause from the back seat. “Handmade water?” she asked doubtfully. “I guess I was thinking of artisanal water,” I covered.
