Although it has been a staple in Asia for 2,000 years, tofu has only recently found a spot on the American dinner table. Tofu, also known as soybean curd or bean curd, is made by separating soy milk into curds and whey (a thin, light-amber liquid). The curds are drained and pressed in a fashion similar to cheese making.
